Adam Weiss, Executive Chef/Owner

Chef Adam Weiss comes from a line of experienced cooks starting with his grandmother and mother, who would make elaborate meals during all the major holidays. All this inspiration led Adam to develop a passion for the culinary arts. He received a Bachelor’s Degree from the Culinary Institute of America in Hyde Park, NY. Chef Adam completed his culinary externship at Ruga Restaurant in Oakland, NJ where he began his focus on New American cuisine.

Upon graduating from the Culinary Institute of America, Chef Adam started as a line cook at contemporary New American restaurant, Esty Street, in Park Ridge, NJ. His talent was soon recognized, and during his decade-long tenure at Esty Street, he also served as Sous Chef, Pastry Chef, and ultimately the Executive Chef. During this time, Executive Chef Adam earned two 3.5 star reviews from the Bergen Record as well as a three star review from New Jersey Monthly magazine.

Next, Chef Adam took his New American experience to Due Restaurant in Ridgewood, New Jersey where he served as Executive Chef. Italian American influence was incorporated into his culinary repertoire. Once again, he was awarded a 3.5 star review, his third, from the Bergen Record as well as receiving another three star review from New Jersey Monthly magazine.

In addition, Chef Adam Weiss was a contestant in the Ultimate Chef competition hosted by Chef Central in Paramus, New Jersey. He won the competition in 2012 and became the first contestant to retain the title the following year in 2013. Chef Adam was invited back to be a judge in 2014.

Adam was then given the opportunity to become the opening Executive Chef of Stone and Rail gastropub in Glen Rock, New Jersey. All these New American and global influences helped him create a seasonal and global menu to appeal to discerning diners.

After two decades in the restaurant industry, Chef Adam Weiss decided to open a restaurant of his own. Since this was Chef Adam’s first venture, he decided to name his restaurant, F1RST.

F1RST (pronounced first: the 1 simply replaces the letter i) is a contemporary Eclectic New American fine dining restaurant with a focus on seasonal American dishes. Chef Adam’s culinary vision is globally influenced fare with a modern twist. F1RST provides delicious quality meals artfully presented with exceptional service in an inviting upscale atmosphere.
